Summer Eats: Get ‘em While They Last!
One of the best things about summer? All the super-fresh produce overflowing at the many local farmers markets. Although our growing season is short, it’s mighty! And this is the best time to take advantage of the fruits and veggies coming into their prime at this time of year. Below is a super abbreviated list of what is seasonally fresh in Minnesota through July, August and September, plus a few recipes to help you indulge in summer’s bounty.
Lots of veggies: asparagus, cucumbers, summer squash, green beans, beets, tomatoes, okra, peas, radishes and so much more!
Greens on greens: endive, chard, cabbage, lettuce
All the herbs!: basil, parsley, rosemary, tarragon, mint, lavender
Flavor bombs (the delicious kind!) like fennel, garlic and chili peppers
And, of course, fruits: berries, cherries and plums
Take most of what you can find in July and add some more to the mix like eggplant, cantaloupe and watermelon
We get to make that list even longer with goodies like Brussels sprouts, parsnips, winter squash, apples, pears and grapes
As for those recipes? Well the easiest way to enjoy your summer harvest is straight from the garden. But if you want to get fancy, we’ll give you fancy.
