You know the feeling when you’re just SO BORED with all of the recipes you’ve been making but finding new ones seems like so much work? Who has time to crawl through hundreds of recipes on Pinterest when you need dinner on the table in 2 hours?
While I’m a big advocate for meal planning at the start of each week, sometimes it’s not in the cards and easy, quick, go-to meals are the secret to not going out to eat or eating cereal for dinner...again. Here are 5 plant-based blogs to check out when you’re in an inspiration rut!
Deliciously Ella: The recipes on this blog scream comfort food and make me want to sit by a cozy fire with a book while enjoying them. Sweet potato and chickpea stew followed by Carrot Cake Cookies sounds like a dream meal!
Yup...It’s Vegan: Once I saw the image of this Vegan White Cake, I knew this would be a good blog. #drool Since we can’t always eat cake as our meals, I also found this recipe for Thai Peanut Cauliflower Wings that looks amazing and Tomato Basil Gnocchi Soup that would be delicious on a cold night!
It Doesn’t Taste Like Chicken: Not only does this blog look cool, but I love the idea of ‘fuss-free vegan recipes.’ Sam, the author, even tackles foods like vegan seitan pepperoni, cheesy garlic bread, and other foods that typically aren’t vegan. She also claims to have the best vegan mozzarella recipe! The recipes on this blog would be great for someone transitioning to plant-based that is looking for alternatives to their favorite foods.
Pass the Plants:When I saw the recipe for the Spaghetti Squash Burrito Bowls, I thought, “Why haven’t I thought of that?” Genius! Vegan Thai Chickpea Pizza would also be a great weeknight meal to put together!
